
Lemon curd is a delicious sweet and sour lemon cream made with egg yolks, butter and freshly squeezed lemon juice. It is the perfect addition to a cake, pie or cold dessert.

Place lemon juice, lemon zest, sugar and egg yolks in a pot with a thick bottom.
Start heating over the lowest heat, stirring constantly, until the mixture thickens (this may take up to 10 minutes) and sticks to the spoon.
Remove the mixture from the heat and add the butter. Mix vigorously.
Pass the lemon curd through a strainer to remove any lumps and set aside to cool.
Store in a jar for up to 2 weeks or in the freezer for up to 12 months.
